1/4 Cup Fat-Free Mayonnaise
1/4 Cup Plain, Non-Fat Yogurt, Drained
1 Teaspoon Lime Juice
1 1/2 Teaspoon Cumin, Or To Taste
2 Cup Freeze Dried Chicken*
1/2 Cup Chopped Freeze Dried Green Peppers*
1/2 Cup Black Beans, Drained
1/2 Cup Freeze Dried Corn*
1/4 Cup Red Onion, Finely Chopped
1/2 Cup Freeze Dried Tomato Chunks*

*Reconstitute before using.
Follow directions on #10 can to reconstitute.


1. In a small bowl, combine chicken, green peppers, black beans, corn, red onion, and tomato.

2. Combine dressing ingredients then stir in salad.

3. Serve on a bed of spinach leaves or make a wrap using a low-fat whole wheat tortilla.
