Ingredients
3 Eggs*
1 Teaspoon Vanilla
2 Teaspoon Baking Soda
1/2 Teaspoon Cinnamon
2 Cup Sugar
2 Cup Freeze Dried Zucchini Slices*, Grate
1 Teaspoon Salt
3/4 Cup Light Raisins
1 Cup Oil
2 Cup Flour
1 Teaspoon Baking Powder
1 1/2 Cup Nuts, Chopped
1 Teaspoon Nutmeg
*Reconstitute before using.
Follow directions on #10 can to reconstitute.
Preparation 1. Mix sugar and oil; Blend in eggs and zucchini; Add salt, baking soda, flour, spice and flavoring.
2. Bake in 2 greased and floured 9" x5" x3" loaf pans.
3. Bake at 350°F for 50 minutes.
