Ingredients
3 Eggs
1 Teaspoon Vanilla
2 Teaspoon Baking Soda
1/2 Teaspoon Cinnamon
2 Cup Sugar
2 Cup Freeze Dried Zucchini*
1 Teaspoon Salt
3/4 Cup Light Raisins
1 Cup Oil
2 Cup Flour
1 Teaspoon Baking Soda
1 1/2 Cup Baking Powder
1 Teaspoon Nutmeg
*Reconstitute before using.
Follow directions on #10 can to reconstitute.
Preparation 1. Mix sugar and oil, blend in eggs and zucchini, add salt, baking soda, flour, spice, and flavoring.
2. Bake in 2 greased and floured 9"x 5" x 3" loaf pans.
3. Bake at 350°F for 50 minutes.
