1/2 Cup Shortening
1 Teaspoon Vanilla Extract
3/4 Cup Honey
1 Egg
1 Cup All-Purpose White Flour
1/8 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Pinch Salt
1 Cup Rolled Oats
1/2 Cup Chopped Pecans
1/2 Cup Freeze Dried Zucchini Slices*, Shred
1/2 Cup Freeze Dried Raisins*

*Reconstitute before using.
Follow directions on #10 can to reconstitute.


1. Preheat oven to 350°F. Grease cookie sheets.

2. In a large mixing bowl, cream together the shortening, vanilla, and honey. Beat in egg until well-blended. Combine flour, baking soda, baking powder and salt; Stir into honey mixture. Stir in rolled oats, zucchini, pecans, and raisins. Drop by teaspoonfuls on greased cookie sheet, and flatten slightly using a fork.

3. Bake 10-12 minutes in preheated oven until browned. Remove from cookie sheet to cool on wire rack.
