Ingredients
4 Cup Freeze Dried Zucchini*, Shred
1 Cup Freeze Dried Onion*
2 Eggs, Beaten
1 1/2 Cup Corn Muffin Mix
1/2 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper
1 Cup Freeze Dried Shredded Cheddar Cheese*
*Reconstitute before using
Preparation
1. Preheat oven 350°F; Grease 2-quart casserole dish.
2. In a large mixing bowl, mix zucchini, onion, eggs, muffin mix, salt, and pepper.
3. Stir in 1/2 cup cheddar cheese.
4. Spread mixture into prepared casserole dish; Top with remaining cheese.
5. Bake for 60 minutes.
